
Minced Meat Noodles, Singapore style
This is the list of places I like to go to, and to bring friends to. I break it down by food/dish.
1. Minced meat noodles (bak chor mee)
This
is like the Chiu Chow noodles you can get here (at Hai Ky in the
Tenderloin), but more mushroomy and vinegary. I love it. In Singapore,
by default you get the non-soup version, with chilli sauce.

2. Laksa (the Singapore version - the coconut gravy one)
Usually my mom makes this for me, but if I had to go look for it, I'd go here, which is the authentic place. There are 2 competing stalls, selling very similar versions, across from each other (if i remember right). They're about the same, I go to whichever.

You can get this most places, like East Coast Food Center (I would avoid Newton Hawker Center though, they fleece tourists. Besides, East Coast Park is by the sea, nice and breezy).
If you like eating on the street, I'd recommend having this in Smith Street, down in Chinatown.

The stalls only open at night, and they block off the street so you eat right on it. The bbq stingray stall is right on the end, nearer to Neil Road
4. Chiu Chow porridge with fish
My brother brings me to this place called Teo Heng at Ground Floor, Amoy Street Food Center.
This is in the middle of the business district, so it gets crowded at lunchtime (noon). It's pretty dead in the evening, so go early.

Chicken Rice (Traditional)

They're known for being the original Chicken rice place, the rice here is good. You can also get roast pork, and a side of veggies (they fry a mean Choy Sum here). Think they only serve steamed chicken rice here.

You can get roasted chicken rice here. You can also get chicken chop, pork chops, Hor Fun (the fry flat rice noodles with random stuff), Yee Meen (same thing, but with buckwheat noodles, i love this), etc.

6. Pepper/ Steamed/ Chilli Crab + Cereal prawns
You'll have to go to "No Signboard" Restaurant for this. They have several outlets, but I like the one at East Coast.

7. Roti Prata & Roti John
You have to eat this till you drop. It's so expensive here!!!
Roti Prata is the plain crispy bread, but you can get the egg and/or onion version.
Roti John is a baguette that they stick an omelette on. It's a complete meal.

8. There's also Murtabak, which is a Prata stuffed with meat.

Other hawker centers to go for just general good food:
Tiong Bahru Market (they have "Chwee Kuay": a steamed rice pudding/cake with chopped preserved vegetables on top. Great for breakfast!!)

Old Airport Road Hawker Center (everything here is really good, but a few Singapore style wanton noodles stalls stand out: they're in front, facing the road, with a numbered ordering system).

People's Park Food Center (on the edge of Chinatown, there are stores upstairs that sell fabric, and toilettries - very odd i know.)
There's a stall in the middle that sells Yong Tau Foo (hakka style stuffed tofu, then deep fried, with noodles and soup). It's good, but be prepared to wait! They're not ready till about noon, too.

These places serve the partying crowd that go to Zouk nightclub. Chiu Chow style white rice porridge with sweet potatoes, with steamed fish/squid, preserved vegetable accompaniments.
